Sourdough Discard Pretzel Bites Ingredients

Make sure you have these ingredients on hand before getting started. Check out the recipe card below for exact measurements and easy to print/save instructions.

  • water warm
  • dark brown sugar
  • salt
  • active dry yeast
  • sourdough starter discard
  • all purpose flour
  • butter
  • coarse sea salt or other favorite topping
  • baking soda for boiling
  • egg yolk

These pretzel bites are a perfect way to use your daily sourdough discard. All you need is a cup of discard to make a huge batch of bites. If you do not have a full cup of discard, you can easily halve the entire recipe – I promise you will still have plenty of pretzel bites to enjoy.

Recipe Notes

One of the biggest tips I can give is to use a very deep pot when boiling your dough balls. The combination of the dough and baking soda does create a lot of foam on top, and keeping it contained in a deep pot will make cleanup much easier.

Also, the dough balls will expand a bit when you are boiling, so it is ok if they start small. They will still be soft on the inside.

Saving and Storing

I will say that these little bites do not save for very long. Since they are made with no preservatives, they are best eaten within 48 hours. The good news is that they are so delicious you will not have trouble eating them all.

Store them in an airtight container with a dry paper towel to help absorb moisture. You can choose to keep them on the counter or in the refrigerator. They stay fresh for about 2 days on the counter and 3-4 days in the refrigerator.

You can also freeze these pretzel bites and they are best reheated in a toaster oven or air fryer.

Equipment

  • 1 stand mixer
  • 1 cookie sheet with elevated wire rack

Ingredients

  • 1 1/2 cup water warm
  • 1 tbsp dark brown sugar
  • 1 tsp salt
  • 3/4 tbsp active dry yeast
  • 1 cup sourdough discard
  • 4 cups all purpose flour
  • 4 tbsp butter melted
  • 3 tbsp coarse sea salt for topping
  • 3/4 cup baking soda for boiling
  • 1 egg yolk

Instructions

  • In a large bowl combine warm water, brown sugar, and salt and whisk together. Sprinkle active dry yeast on top and let sit for 5-10 minutes or until the yeast is foamy.
  • Add the sourdough discard, flour, and melted butter, and mix together until a dough ball forms. Place the dough ball into an oiled bowl and let rise one hour or until it has doubled in size.
  • Preheat oven to 450º F. Bring a large pot of water to a boil and add baking soda to the water. Turn the dough out onto a large surface and begin pinching off bits of dough and rolling it into a ball about the size of a quarter. Note: The dough will expand some so make these nice and small.
  • Drop little dough balls into boiling water and let boil for about 30 seconds. Using a slotted spoon, dip boiled dough balls onto a cookie sheet with an elevated wire rack.
  • In a separate bowl, mix egg yolk with a splash of water. brush onto each dough ball and sprinkle generously with coarse sea salt or desired topping.
  • Place the cookie sheet into the oven and bake until brown and cooked through – approximately 13 minutes.
