Turn your sourdough discard into a delicious bite sized snack. These Sourdough Discard Pretzel Bites are firm on the outside and soft on the inside - just like your favorite soft pretzel!
In a large bowl combine warm water, brown sugar, and salt and whisk together. Sprinkle active dry yeast on top and let sit for 5-10 minutes or until the yeast is foamy.
Add the sourdough discard, flour, and melted butter, and mix together until a dough ball forms. Place the dough ball into an oiled bowl and let rise one hour or until it has doubled in size.
Preheat oven to 450º F. Bring a large pot of water to a boil and add baking soda to the water. Turn the dough out onto a large surface and begin pinching off bits of dough and rolling it into a ball about the size of a quarter. Note: The dough will expand some so make these nice and small.
Drop little dough balls into boiling water and let boil for about 30 seconds. Using a slotted spoon, dip boiled dough balls onto a cookie sheet with an elevated wire rack.
In a separate bowl, mix egg yolk with a splash of water. brush onto each dough ball and sprinkle generously with coarse sea salt or desired topping.
Place the cookie sheet into the oven and bake until brown and cooked through - approximately 13 minutes.
