Sourdough Discard Pretzel Bites

Turn your sourdough discard into a delicious bite sized snack. These Sourdough Discard Pretzel Bites are firm on the outside and soft on the inside - just like your favorite soft pretzel!

Ingredients

  • 1 1/2 cup water warm
  • 1 tbsp dark brown sugar
  • 1 tsp salt
  • 3/4 tbsp active dry yeast
  • 1 cup sourdough discard
  • 4 cups all purpose flour
  • 4 tbsp butter melted
  • 3 tbsp coarse sea salt for topping
  • 3/4 cup baking soda for boiling
  • 1 egg yolk

Instructions

  • In a large bowl combine warm water, brown sugar, and salt and whisk together. Sprinkle active dry yeast on top and let sit for 5-10 minutes or until the yeast is foamy.
  • Add the sourdough discard, flour, and melted butter, and mix together until a dough ball forms. Place the dough ball into an oiled bowl and let rise one hour or until it has doubled in size.
  • Preheat oven to 450º F. Bring a large pot of water to a boil and add baking soda to the water. Turn the dough out onto a large surface and begin pinching off bits of dough and rolling it into a ball about the size of a quarter. Note: The dough will expand some so make these nice and small.
  • Drop little dough balls into boiling water and let boil for about 30 seconds. Using a slotted spoon, dip boiled dough balls onto a cookie sheet with an elevated wire rack.
  • In a separate bowl, mix egg yolk with a splash of water. brush onto each dough ball and sprinkle generously with coarse sea salt or desired topping.
  • Place the cookie sheet into the oven and bake until brown and cooked through - approximately 13 minutes.

Recipe Notes

Use a deep pot for boiling pretzel bites to make sure it does not boil over.
