Freshly grated cheese will taste better than pre-shredded bagged cheese as it melts better into the sourdough starter.

Make sure to spread the mixture as thinly as possible for crispy crackers. Also, be sure to watch the crackers to prevent burning. They can turn too brown very quickly in the oven. You want to remove the sourdough cheddar crackers when they are just beginning to brown. They will crisp up as they cool.

This recipe is made with sharp cheddar cheese, but you can change up the flavor using mild cheddar, mozzarella, colby, pepperjack, and more. You can also add seasonings like cayenne for a spicy kick or Everything But The Bagel Seasoning for a completely different flavor.

Sourdough Discard Cheese Crackers

Ingredients

  • 1 cup sourdough discard
  • 1 cup cheddar cheese finely shredded
  • 4 tbsp butter melted
  • 1 tbsp coarse salt divided

Instructions

  • Preheat oven to 375º F
  • In a large bowl, mix together sourdough discard, cheddar cheese, butter, and about 1/3 of the sea salt until well combined.
  • Pour mixture onto a parchment lined cookie sheet and using a spatula, spread mixture as thinly as possible. The thinner the cracker the crispier it will be!
  • Once spread, sprinkle the remaining coarse salt evenly over the top of the mixture.
  • Place cookie sheet into oven for 8 minutes. Remove sheet from oven and using a knife or pastry cutter, score the mixture in 1" squares to make crackers.
  • Place sheet back into oven for 12-15 more minutes or until crackers are crispy and starting to turn brown on the top.
  • Let cool before breaking crackers into pieces. Enjoy!
