Pauline Manor Bakery was not even a thought when we bought this house, but when you move into a 1908 home with three ovens already built in, it feels like the universe is telling you to start baking. What began as a weekend hobby quickly grew into a full-blown cottage food bakery right here in Cantonment, Florida, and it has brought more joy and purpose than I ever could have planned for.
This old house has seen a lot of life, and now it sees a lot of flour. The same kitchen that once fed families a century ago is where I spend my mornings feeding sourdough starter, shaping loaves, and experimenting with recipes that feel familiar but fresh. There’s something about working in a place with this much history that makes every bake feel connected to something bigger.
Sourdough is the heart of everything we make at Pauline Manor Bakery. It’s simple, real, and a little unpredictable in the best way. The process demands patience and care, but the payoff is worth it every single time. From classic loaves and soft cinnamon rolls to crisp crackers and chewy cookies, everything starts with good ingredients and time.
There’s no rush here, no shortcuts, and definitely no weird additives. Every batch is made by hand, in small quantities, with the same attention I’d give if I were baking for my own family. It’s slow, honest baking that tastes like home and reminds you that simple food made well will always be worth the wait.


Of course, running a bakery inside a century-old house isn’t without its quirks. The kitchen faces east, which gives me a beautiful view of the garden... but also means direct sunshine almost all day long. Between the direct sun and three ovens running, the room gets pretty warm during the already-too-hot Florida summer.
The ovens - while much newer than the home, of course - have minds of their own, each one with its own personality, quirks, and preferred bake times. It’s part science, part guessing game, but mostly? It’s an adventure. And honestly, that’s the fun of it.
But Pauline Manor Bakery is more than just bread and pastries - it’s a story in the making. A house with a past, a bakery with a future, and me, somewhere in the middle, covered in flour and figuring it out as I go.
